This year’s food and drink extravaganza will take place on Sunday 27th May 2012, with trading commencing at 11:00am and finishing at 5:00pm.

All things retro will be on offer from 10:00am until 4:00pm at the first-ever ‘Strictly Vintage’ event, in Market Corner.

Twenty traders have booked in to trade on Saturday and will be selling unique vintage clothing, handbags, jewellery, textiles and home furnishings spanning across the decades.

There will also be a variety of refreshments, including homemade cakes and tea served in vintage china.

Visitors can also dip into the future with tarot card and tea-leaf reading.

Joe Harkin, market development manager at Leicester City Council, said:

“We are always looking at adding something different to our events and festivals and I think Strictly Vintage will prove a big hit.

“We are already working on the next fair and looking at adding even more dimensions to it, including a vintage fashion show and putting on some 50s Rockabilly music.”

Lucinda Ottley, who will be selling her range of ladies dresses and retro jewellery at the fair, said she was looking forward to trading on Saturday – the second time she has done so at Leicester Market.

Lucinda, who is travelling across from Birmingham to trade at the fair, added:

“We had a great day’s trading at last year’s vintage and music festival and hope the regular monthly ones are just as busy. Some of my items have a cult following in Birmingham and I am sure the people of Leicester will like them too.”

Ingredients

For the mash –

900g of potatoes, peeled and then cut into chunks

1 tablespoon of vegetable oil

1 onion, sliced

1-2 teaspoons of Bombay Potato spice mix (add enough to suit your personal taste)

A large handful of spinach

1 tablespoon of coriander

For the sausages –

450g spicy pork sausages

Serve with mango chutney

Method

Place the diced potatoes into a medium saucepan, covering the contents with water before boiling for 15 minutes until soft. Here’s a tip, loosely cover the saucepan whilst boiling the potatoes – as it will make it easier to mash the spuds later! Whilst the potatoes are cooking, preheat the grill to a medium heat.

Heat the oil in a frying pan and soften the chopped onion for 2-3 minutes. Add the Bombay Potato spice mix and cook for another 1-2 minutes to fry the spices off.

Cook the sausages under the grill for 12-15 minutes, turning occasionally until they are cooked through.

Drain the boiled potatoes and crush lightly with a masher. Stir in the spiced onions, spinach and coriander.

Serve the spicy sausages with the crushedBombaymash, mango chutney and perhaps a crunchy salad of radishes, cucumber and a bit more coriander.

Preparation Time: 15 minutes

Cooking Time: 20 minutes

Serves 2

Ingredients

Olive oil
1 garlic clove, sliced
4 thin slices of chorizo, cut into thin strips
A pinch of chilli flakes (or fresh chilli, finely diced)
400g tin of chopped tomatoes
2 thick cod fillets or other sustainable white fish
Green beans cooked to serve

Method

Heat a tablespoon of olive oil in a pan, then cook the garlic and chorizo for a few minutes. Add the chilli and tomatoes and allow to simmer forten minutes until thickened. Add seasoning to taste.

Whilst the sauce is simmering, rub the fish with a little more olive oil, season and then grill or steam the fish until cooked through – usually between 4-6 minutes.

Serve the fish with the sauce and green beans.

Preparation Time: 5 minutes

Cooking Time: 15 minutes
